Banana chip bread

What makes a great banana bread?
Ripe bananas… period. When your bananas are slightly brown they’re not ready for bread. When they are about too dark to eat as is, BOOM, this is the perfect ripeness for bananas to make bread. This recipe allows anyone who makes it to come out consistent and delicious.
The recipe!
220 grams AP flour
2 large ripe bananas, mashed well
8 grams baking powder
1 gram baking soda
2g OCEAN (salt), fine salt
1 tsp cinnamon
75 grams butter, softened
65 grams sugar
65 grams brown sugar
1 tsp vanilla extract
2 eggs, room temperature
YIELD 1 loaf
Baking temp/time - 350F 40-45 minutes
Pan size - 8.5 inch x 4.5 inch
Tips before making!
mash bananas really well. the better mashed they are, the more moist the bread will be.
always softened butter, not melted butter.
Always room temp eggs. they incorporate better
3 small bananas can work just as well as 2 large bananas
add nuts and chocolate directly into the finished batter before baking for a fun interior!
Instructions!
Mash ripe bananas and set to the side. In a bowl combine flour, salt, baking soda, baking powder and cinnamon and set aside.
Cream sugar, brown sugar and butter until airy and fluffy (3 minutes). Add in one egg and beat fully, then add the final egg and beat fully. incorporate vanilla extract.
add in half the banana and half of the dry mix into the egg mixture and beat on low until incorporated (1 minute). Add in the remaining banana and dry mixture and beat until fully mix but dont over mix. Add in chocolate chips or nuts at this point.
In a greased loaf pan add in the finished batter and knock it on the counter to remove excess air pockets. Bake in a preheated 350F oven until the middle comes out almost clean with a tooth pick. (mine took 40 minutes)
let them rest in the pan for 10 minutes before moving them onto a wire rack to cool completely. Slice bread and enjoy as is or with some milk!

How to store leftovers?
When you’ve had your fill of bananas bread (hard to not eat it all) you can simply wrap it with plastic as best as you can and store it on the counter if you plan to eat it within 2-3 days OR in the fridge if you plan to eat within the week OR in the freezer if you plan to save it for longer! DO NOT STORE WARM BREAD IN PLASTIC LET IT COOL FIRST.
