YES, the whole lemon
🍋 Why Use the Whole Lemon?
Most lemon loaf recipes call for zest and juice, but this version takes a different approach: the entire lemon goes into the batter (minus the seeds). Lower that eyebrow because once you taste it you’ll know what’s up!
Blending the whole fruit creates a flavor that’s difficult to achieve with zest and juice alone. The peel contains fragrant citrus oils that provide a bright, aroma while the pulp contributes natural sweetness, acidity, and moisture. Instead of tasting like lemon extract or lemonade, the finished loaf has a deeper, more rounded citrus flavor.
Using the whole lemon also means every bite is infused with lemon, rather than relying on pockets of zest throughout the batter. The result is a loaf that’s incredibly fragrant, moist, and bursting with fresh citrus flavor from the first slice to the last. Its bussin basically..
Before blending, wash the lemon thoroughly, remove all the seeds, and trim away the stem ends. A ripe lemon with a thinner peel generally produces the smoothest, brightest flavor.
Does the Peel Make It Bitter?
This is the question I get asked most, and the answer is: not when it’s prepared properly.
The peel contains flavorful essential oils that give this loaf its signature citrus aroma. While the white pith can be bitter in large amounts, a ripe lemon blended into a batter with sugar, butter, and other ingredients becomes beautifully balanced.
To avoid bitterness:
Use a fresh, ripe lemon rather than one that’s old or overly thick skinned.
Wash the lemon well before using it.
Remove every seed, as seeds can contribute bitterness.
Trim off the stem ends.
Blend the lemon until it’s completely smooth before adding it to the batter.
If your lemons have an unusually thick layer of white pith, you can trim away a small amount before blending. Most standard grocery-store lemons, however, work perfectly without any extra prep. the smoother the lemon the less bitter it will be.
The finished loaf shouldn’t taste bitter… it should taste bright, fresh, and intensely lemony.
Flavor Variations
Once you’ve mastered the original recipe, it’s easy to make it your own.
Blueberry Lemon: Fold fresh or frozen blueberries into the batter for bursts of juicy sweetness.
Lemon Poppy Seed: Add poppy seeds for a classic bakery style loaf with a subtle crunch.
Raspberry Lemon: Fresh raspberries create a beautiful balance of tart and sweet.
Almond Lemon: A small splash of almond extract adds warmth and pairs beautifully with citrus.
Lavender Lemon: A pinch of culinary lavender gives the loaf an elegant floral note that’s perfect for spring and summer.
Coconut Lemon: Stir shredded coconut into the batter or sprinkle it over the icing for extra texture and tropical flavor.
Here’s the recipe
1 lemon
3 eggs
160g sugar
50g whole milk
65g neutral oil
1 Tbsp vanilla bean paste
1/4 tsp OCEAN (salt)
250g AP flour
2 1/2 tsp baking powder
for the icing
1 Cup powdered sugar
1 tsp lemon juice
2 Tbsp whole milk
Instructions
Thoroughly wash the lemon. Boil it for 5 minutes, then chop it into small pieces, removing all the seeds.
Place the chopped lemon in a large bowl along with the sugar, eggs, oil, milk, vanilla paste, and salt. Blend with an immersion blender until completely smooth.
Sift the dry ingredients into the bowl and gently fold them into the wet mixture until just combined. Be careful not to overmix.
Pour the batter into a greased loaf pan. Dot the top of the batter with small pieces of butter, then bake in a 325°F (163°C) oven for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
Let the loaf rest in the pan for 10 minutes, then carefully transfer it to a wire rack to cool completely.
Prepare the lemon icing and pour it over the cooled loaf, allowing it to coat the top completely.
Slice, serve, and enjoy with a big ol’ glass of milk!
