what is a concha?
Concha is a sweet bread that translates to “shell” in English because it looks like one. A concha is a Mexican sweet bread with a soft, airy dough and a crackly, shell-shaped sugar topping. It’s lightly sweet, super comforting, and often eaten with coffee or hot chocolate. Once you taste it you’ll be hooked!
Pro baker tips for making conchas!
make sure milk is 105F-110F (warm, not hot)
Do not skip the 20 minute autolyse (The end of step 1)
Add butter slowly. rushed butter can make the dough smear and in turn become dense
Chill topping for 15 minutes before working.
No browning should occur when baking. this keeps them soft and perfectly cooked
Rotate the tray halfway into baking for even cooking
When baked and cooled, freeze on day one and defrost as needed. Reheat 10 second in microwave and they taste almost freshly baked!
